Peach trees should be pruned as late as possible but before blooming in the spring. Growers with only a few trees may be able to wait until the first of March to prune. However, growers with multiple acres of trees may have to begin pruning several weeks before bloom to ensure the job is completed on time.
When do I prune it? Peaches should be pruned in February, after the worst of the cold, but before the flowers open. Peaches are best when ripened on the tree but fruit growers may wish to pick a bit early to prevent damage from birds, have a higher pectin content for jams and jellies or to have firmer fruit for canning. Peaches that are mature enough to pick are still hard. They do not give when lightly squeezed.
Cut ripe peaches into slices or cubes and store them in the refrigerator for up to five days in an airtight container. The cold air prevents the peaches from ripening further, and the airtight container prevents the peaches from turning brown.
Unlike permanent crops that last for 40 years, peach and nectarine trees only last for about 12 years.

Slice A Whole, Unpeeled Peach
If slicing an unpeeled peach, start by cutting it in half all the way around. Hold each half of the cut peach and twist the halves in opposite directions. This action will loosen the pit. Pull the peach halves apart and remove the pit.
Place a shallow bowl of peaches in direct sunlight but be careful that they don`t get too hot, or they will start to bake. The heat will help ripen the fruit quickly. You could also try the famous paper bag trick that`s known to speed things up due to the ethylene gas that the fruit emits.

Standard peach trees have winter chill requirements of 450 to 1,200 hours below 45 degrees between Nov. 1 and the end of February. The proper minimum of chill hours is necessary for flowers and subsequent fruit to form on the tree.
To ripen peaches at home, Siegler recommends “gently tucking the peaches, stem-side down, into a brown paper bag and then folding the opening to close.” Closing the bag traps in the natural ethylene gas that the peach releases as it matures, speeding up the ripening process.
Can You Cut Up Peaches Ahead of Time? Yes, you certainly can! Cut them up and put them in a resealable container. You will notice that quite a lot of juice will leak out into the container.
Long-Term Peach Storage. If you have more peaches than you can possibly eat before they start to spoil or the skin gets wrinkly, the best place to store them is in the freezer.
